Join the Anchorage ARTCC for a nice snowy vacation after the chills of winter for our 2018 FNO.  Featuring full staff at PANC, PAFA, and PAJN on May 25th, 2018, 2300z - 0400z (1900 - 0000 EST). Accounts for March 11 daylight savings time.

I'm planning on doing PANC-PAFA on VFR following AK3 and the river. What should I expect?

Depending on whether you want Flight Following or not. But most likely standard VFR with advisories.

To any folks flying on XP11, do you have any recommendations of where I can take a small GA plane and see some beautiful scenery tonight?

I fly X-Plane 11, and the trip to Valdez is beautiful! It's east of Anchorage.
