I was wondering if there was a way I could check when I created my Vatsim account.

Actually, the StatCheck link should still be active (https://cert.vatsim.net/vatsimnet/statcheck.html). Used to reset your password should it become necessary, it does display the date of issue for the certificate. As far as I know anybody can still use it, at least I've never had special privileges to.
